Eggs Supreme

Ingredients:

  • 2 slices Spelt Sourdough bread (toasted) 
  • 1/4 Avocado (mashed or sliced) 
  • 1/2 Tomato sliced 
  • 8 slices of cucumber 
  • Serving of Sauerkraut (size depends on what you can handle!) 
  • 2 eggs poached or fried in a light coating of oil. (cage free eggs please and organic free range even better!) 

Method:

  • Place two pieces of toast on a plate. Top with avocado, tomato, cucumber, sauerkraut and lastly egg. Voila! 
 Note:

  • Not eating tomatoes? Why not replace them with some baby spinach or roasted beetroot. 
  • Sourdough bread is a fermented food, fermented food is 'live' food. The process of fermentation enhances the digestibility of the food and makes the nutrients within easier to absorb; we call this 'bio availability'. 
  • Sauerkraut is also a fermented 'live' probiotic food. When I refer to sauerkraut, I am not talking about the mushy cabbage slop you find in a can either. This is an incredibly wonderful living 'food as medicine’.
