Irresistible Bliss Balls

Ingredients:

  • 1/3 Cup of Almonds (pre-soaked is best) 
  • 1 heaped tablespoon of pepitas 
  • 1 heaped tablespoon of sunflower seeds 
  • 1 heaped tablespoon of linseeds 
  • 1/2 cup of sulphur free dates or medjool dates 
  • 1/2 cup of organic sulphur free apricots 
  • 1 heaped tablespoon of organic sulphur free sultanas 
  • 2 heaped tablespoons of either carob powder or cocoa powder 
  • 1/4 cup of desiccated coconut for coating
  • 1/4 cup of finely grated 80% dark chocolate for coating 
  • Plenty of Love x
Method:

  • Place the desiccated coconut and grated chocolate into small bowls then set aside. 
  • You need a good blender. First place the almonds, pepitas, sunflower seeds and linseed in the blender. On top of the nuts and seeds place the dates, apricots and sultanas. Then add the cocoa or carob powder.
  • Start the blender on medium and then to full power. Please note that you will probably need to stop the blender after a minute or so and spoon the mixture around with a spoon before proceeding with more blending until you have a smooth consistency. This can take up to 5 minutes. 
  • Once you have a reasonably smooth consistency, place the mix into a bowl. Using clean hands take small teaspoon-fulls of mixture and roll them into balls, then coat in either the coconut or grated chocolate. Please note, powerful blenders will heat the mix slightly, this heat will melt the chocolate when you coat the ball in it. This is ok. You may choose to let the mix cool a little before coating in the chocolate to avoid this. 
  • Once the balls are coated, place them in an airtight container and store in the fridge. This will firm and set them ready for eating. 
  • Enjoy! 
 Note:

  • Dried fruit and nuts are natural laxatives. If you eat too many at once they will get your bowels moving!
