Sweet Potato Fritter Fry

Ingredients:

  • 1 cup grated sweet potato 
  • 2 eggs beaten 
  • 2 tablespoons of buckwheat flour 
  • 1 tablespoon chopped chives 
  • 1 tablespoon chopped parsley 
  • A pinch of celtic sea salt
  • handful of green beans 
  • 1 large tomato cut into 8 wedges or half a beetroot cut into wedges.
  • 3 button mushrooms sliced into 4, or 1 zucchini thinly sliced into buttons.
  • 1 tablespoon of oil for cooking 

 Method:

  • Pretty easy, place the sweet potato, eggs, flour, chives, parsley, and salt into a bowl and mix until all combined. 
  • Place oil in a fry pan, when the pan is hot drop in heaped tablespoons of the mixture (you should get 6 good sized fritters from your mix), turn the heat down to low and cook for roughly 2.5 minutes each side, flattening your fritters slightly when you turn them. 
  • When your fritters are done set them aside and place the green beans, mushrooms (or zucchini) and tomatoes (or beetroot) in the pan over low heat cooking each side until they are softened and golden. 
  • Arrange on plates and enjoy!
