Caramelised Fruit with Coconut and Macadamia

Ingredients:

- 1 large pear or banana or apple or apricot or peaches or a mix of these
- 1 tablespoon of coconut oil
- 1/4 cup of raw macadamia nuts
- 1/4 cup of shredded coconut

Method:

- Preheat your grill on medium to low setting
- Take your preferred fruit and cut it up into slices about .5cm thick
- Heat the coconut oil in a heavy based pan on medium to low heat. Once hot carefully place your fruit into the pan. You want to caramelise the fruit on each side. How long this takes depends on your pan and the heat etc....So keep an eye on it. Should take a few minutes each side, you are looking for the forming of a lovely brown colour. 
- Once you have caramelised both side of your fruit, lay your fruit out in a small baking dish (like pyrex) so that the bottom surface is completely covered. 
- Take your macadamia nuts and process them until they are finely ground. 
- Place your finely ground macadamia nuts in a mixing bowl and add your shredded coconut. Stir until well blended. 
- Now place your macadamia/ coconut blend over the top of your fruit making sure all the fruit is completely covered.
- Place your baking dish under the grill until the crumble topping turns a golden brown colour. Keep an eye on it as this will not take long and it is easy to go too far and burn the topping. 

#Please note that the quantities given are for 1-2 serves, simply double the quantities to double the serving size.
