Cacao Jellies


I love it when my clients share their recipes with me. 

This one came from one of my clients who was looking for healthy, sweet, but low in added sugar treats for her kids, and this recipe certainly fits that bill.

Now this is a regular favourite in our household as well, it is pretty simple to make and is good for you.

Ingredients:

  • 1 cup Coconut Milk/ Cream. Full fat please, and also check the ingredients on your product as many are mostly made from coconut extract, water and thickeners. Alternatively you can make your own coconut milk - but that is another recipe!
  • 2 tablespoons of cacao powder.
  • 2 tablespoons of honey or maple syrup
  • 3 tablespoons of grass-fed gelatin (the kind you find in the health food store)
Method:
  • Place your coconut milk, cacao and honey or maple syrup into a saucepan and simmer over low heat. 
  • Then add your gelatin slowly, a little at a time, while you whisk the mixture vigorously to prevent clumps and assist the gelatin in dissolving.
  • Once all the gelatin has dissolved into the liquid, take off the heat.
  • Take some moulds, silicon ones work best, and pour your mixture into the moulds carefully. Then place in the fridge to set. 
  • Once set, take the jellies out of their moulds and store in the fridge in an airtight container. These will keep in the fridge for at least a week. Ours have never lasted longer than that simply because we have eaten them all!
